Chicagoland’s First Eco-Friendly Restaurant
The Chicagoland area’s dining scene just got greener with the first eco-friendly restaurant Prasino, which focuses on seasonal, locally-grown organic food. 
Prasino (the Greek word meaning “green”) is open for breakfast, lunch, and dinner, all served in a “modern, environmentally-conscious setting” that includes earthy materials such as light fixtures made from recycled wine bottles and tabletops made with rescued wood from a race track
Prasino’s executive chef Scott Halverson (a Le Cordon Bleu-trained chef and a veteran in the kitchens of private clubs and luxury hotels including the historic Driskill Hotel in Texas) uses local, artisanal, and organic growers to source his food, including:
- Organic eggs for baked goods and breakfasts items.
- Niman Ranch antibiotic and hormone-free meats for sandwiches and entrees.
- Seafood and shellfish (including line-caught Alaskan black cod and Tasmanian salmon) sourced from 100% sustainable and environmentally-friendly purveyors.
- Vegan, vegetarian, and gluten-free items infused with organic olive oils.
Signature menu items include:
- Crab Cake Benny (English muffin, two house-made blue crab cakes, poached Eggland’s Best eggs, Hollandaise sauce).
- Chocolate Hazelnut Strawberry Banana Crepes (fresh bananas, Nutella drizzle, topped with fresh strawberries).
- Niman Lamb Sandwich (French bread, chipotle mayo, cilantro, tomato, feta, avocado).
- Hot Smoked Sockeye Salmon (spinach, apples, pecans, red onions, goat cheese, and raspberry vinaigrette).
Along with an impressive food menu, Prasino creates equally impressive drink specialties such as smoothies made with flax, granola, banana, soy milk, and pure stevia leaf extract with flavors such as Goji berry and chocolate; fresh fruit and vegetable-blended juices; and organic coffees.
