Easy Lumpia Recipe
This recipe for Vegetable Lumpia (fried Filipino egg roll) is really quick to make. It takes advantage of pre-washed, pre-sliced veggies, which take away some of tedious job of slicing up the veggies julienne-style.
Ingredients:
1 teaspoon garlic, chopped
1/2 onion, chopped
1 pound ground pork
1 bag broccoli slaw
1/2 bag julienned carrots
2 green onions, chopped
1 medium sweetpotato, julienned
1 cup celery, chopped
1 cup water
vermicelli noodles
1 tablespoon vegetable oil
salt and pepper to taste
egg roll wrappers
oil for frying
Heat 1 tablespoon oil in pan. Saute garlic and onion until onion is transparent. Add ground pork and cook until brown, breaking up large pieces during cooking. Add 1 cup water and allow to simmer. Add noodles and vegetables and cook for just 3 minutes to keep the veggies crisp. Remove any liquid that remains, and cool the mixture. Wrap 2 tablespoons of the mixture in each egg roll wrapper. Fry in hot oil.
Serve with vinegar with salt and pepper (hot chilis are optional).
Variations: Instead of sweetpotato, you can use cabbage, jicama, or sprouts.
