Seafood Tasting with a View to the Sea
As if the dazzling view and delectable fare were not reason enough to splurge at the Ritz-Carlton Laguna Niguel’s fancy Restaurant 162′, now Chef de Cuisine John Garcia has created a sublime Seafood Tasting Menu.
Every Friday night, the restaurant presents a weekly changing four-course menu that incorporates seasonal seafood and regional fish. The price per person is $65 (not including tax and gratuity), a bargain when you consider the surroundings and the quality.
Chef Garcia has risen in the culinary ranks as an apprentice at the illustrious Hotel del Coronado, sous chef at Burke’s Park Avenue CafĂ© in Chicago as well as the Hotel del Coronado’s Prince of Wales restaurant, and has been chef at such high-end establishments as Scottsdale’s Wigwam Resort.
Examples of elegant menu items include sashimi, lobster, and barramundi–all magnificently presented and colorfully dressed with such accompaniment as black radish, kumquat, heirloom tomato, spring pea puree, beet foam….. Sharing plates are also available, so that friends and family can can have a little taste of everything.
